Holy crap...with your birthday and hubby's birthday so close together, one would think you would have done what you could to spread the kids out a little.
The cruise IS our Christmas/Birthdays/Anniversary combined - we haven't done gifts for each other in years. We get a few for the kids and do a Dirty Santa gift exchange with the rest of the family and that's IT. It helps keep things under control. Oh, and we're going to St. Maarten, St. Thomas and Nassau. We've been to all three on previous cruises (that's our favorite vacation), but I can never get tired of St. Maarten and St. Thomas.

I don't know if that would be wise. He is very very good with physical things (don't get the wrong idea Treb) . He can hook stuff up, cables and stuff but when it comes to inner workings of the phone, I am the inquisitive one. Most often I am handed his phone and told "this is what I want to do... can you make it happen". So with that being said, I will leave the choice up to him. Afterall, a little knowledge.....
Not to mention, I haven't done anything with my new found freedom yet, so there is really nothing to show off.

I do, yes. I don't flash ROMs but I do like knowing my phone's backed up.
Had a situation a while back where my old Incredible got screwed up - so I restored an old Nandroid I had, then some data from the previous night and I was fully back up and running.

Need to look into putting Wallet on. Did Google Now, not Wallet though.
If XplosiV had you install CWM or TWRP then you should be able to boot into recovery and do a nandroid backup. This is a backup of everything. For more targeted backup then TiBu (Titanium Backup) is the 800 Lb gorilla.
If you decide to start deleting system apps or flashing mods, then definitively do a backup. Beyond that you "should" be OK until you decide to flash a JB rom or something.
I only qualified that with should as I don't run backups unless I am doing something that has the potential to muck up my phone and never had an issue. I suppose in one of the scenarios where you need to do a factory reset a backup would be handy for more quickly getting your device up and running.

Ok... So, Back to the computer I shall go. Since that is where I would back it up to correct ? Or is it just backed up locally to my SD?

^This. Backing up is the main reason I would want to root. Nothing worse than losing all your app settings if you have to uninstall an app or *gasp* do a factory reset.
