Help com.google.process.gapps

Hi everyone,
I am new to the forum.
I have been having a few issues with the android system (my own fault). I have recently rooted my phone and deleted Gmail, Gtalk etc. Ever since then I have had the 'com.google.process.gapps' error message keep coming up.
I have done a fair bit of searching and everything I have tried has not worked.
Is it possible to re-load 2.1 onto my phone? Or should I think about upgrading to a better system 2.2, 2.3 or 4.0?

Hopefully someone could give me a step by step guide on how to do this? Or forward me to some links which could help.

Im getting rather frustrated with it now.

Thanks
Looking forward to your replys.

Android is google - and gtalk and gmail are required applications for android to run. Have you made a back up you can restore to? You may need to look at flashing to a new custom rom.

Had this happen on a Vivitar XO tablet. Uninstalled all updates to Google Play Services. It worked. It was a HORRIBLE nightmare trying to figure it out. There is nothing on the internet about it. None of the menus are similar to other devices.
In the parent menu, select go to Andriod/return to Andriod. Go to settings. Select Apps on the list on the left. Go to Google Play Services in the list on the right. Select Uninstall. Holy shit what a complete nightmare.
