Help Editing home screen's bottom drawer

Unlike my SGP and Galaxy Exhibit, I cannot seem to edit the bottom drawer on my Captivate. Any ideas? I want to get rid of the email app since I use the browser's home page for my Gmail.
Also, is there any way to edit the dropdown options? I never use Bluetooth and would love to swap that for data on/off on at least the Galaxy Exhibit.
 
(This is off the top of my head seeing as to how I haven't fidgeted with either of the questions you have in a long while, so forgive me if I'm off):

To edit the app drawer, go into to your "applications," hit your "menu" soft button, and switch to the option that is NOT alphabetical list or alphabetical grid (can't remember the name but there is a third one that you'll want to make sure you're switched to). From there you'll be able to drag whichever app you want down into the app drawer and replace the stock email app that you don't use.

OR you can just download a 3rd party launcher (GO Launcher EX or Launcher Pro for ex.) and they let you switch around the app drawer just by dragging on the icons.

To edit the notification bar panel, you MUST root. In other words, there is no simple way to remove "bluetooth" from the options via the settings menu. If rooting and flashing is something that you want to do, Youtube is your best friend. By the way, "toggle" widgets (and there are many kinds out there in the app market) can sort of help you if you really want the data ON/OFF switch, but as you probably know, that would not be in your dropdown notification panel.
