I've still got a lot of physical media though. I probably should rip it all. The CDs are done. But the DVDs take a long time to rip with the software I used. Has anyone sped up the process of DVD ripping in the past decade?

I've used Handbrake to rip DVDs into MP4. https://handbrake.fr/
And on my white 2008 Macbook with internal DVD drive, it would take about 30 minutes to complete a 2 hour movie. Handbrake is free open source software(FOSS), so no nasty spyware or adware. And it does have automatic batch mode, so all you have to do is just keep feeding it DVDs.
