If I decided to use Nova Launcher or Apex, what cool Samsung UI things would I be losing? Is it worth it or is the general public happy with the stock UI on the Note 2? Thanks!

Quite an individual thing, atrain.

I use the fastest one I can find for my phones, Nova for this one, and also it has to have the capability of hiding the notification bar (giving me the whole screen), and various other things I like.

Again, it's a matter of taste. I'd advise sticking with the stock one for a while to get to know it, then you may find yourself wanting a launcher that does things differently, etc. Maybe not. ;)

Thanks! I've used both Nova and Apex in the past, Apex most recently on my rooted Nexus, but this is my first REAL samsung phone as the Nexus was vanilla. I'm wondering if I would lose something very Sammy specific.
 
Well I'm sure you know you'll have the launcher settings as well as the system settings.
 
You will loose PageBuddy and any Samsung specific Widgets like S Planner and the clock/weather widgets. The programs will still work you just loose the widgets for them. There might be more, I haven't really searched for any.
 
I use GO Launcher. It's not quite as slim as Nova but behaves pretty much the same and I have noticed no performance issues since the early days of using it on my Note 1. I use it because the Go Calendar widget is the best I could find to replace the Samsung calendar widget and, like the Touchwiz widgets, can only be placed on a Go home screen. As stated the widget still links to the Samsung calendar once you go into items.

Page Buddy does nothing for me so no loss there. Again, as above, all the S-Pen stuff, the dual screen bar and all of the stuff from motion settings works fine.
 
I was a diehard Nova user with my DROID RAZR, it is s great launcher. You do lose ability to drop and drag widgets (unless rooted ), but it is highly customizable.

On my Note 2 I am using stock and really like it.

Never had a problem dragging and dropping widgets in Nova, rooted or not.
