Looking for an app to stop all apps

Most, if not all, Android phones have the ability in Settings>Applications>Manage Applications>*App*>Force Close.

Since you specified an app, I'd recommend SystemPanel since I'm one of those "Auto killers are icky" types. Although I'd never say the word icky irl :D
 
is it good to get a 3rd-party one or just use the one on the Galaxy S? and will the task killer save my battery life as well?
 
Task killers will only save on battery life if you've got a badly behaved app. Most apps, when sitting in the background, use no cpu or network resources, and hence use no battery. Many of the apps and services running in the background are needed by other applications, and killing them will slow your phone down (because they need to be reloaded), or make it unstable.

like what applications should i "avoid" killing/shutting down? i found out that task killers slows down the Galaxy S for some reason. anyone else experienced this?
