Periodically manufacturers will release updates to their tablets. Typically these updates can be accessed from the devices support web site or pushed "over the air". In some cases the developer/enthusiast community steps up and puts together their own "unofficial" updates.
As for internal memory upgrades, most memory found within smartphones and tablets are soldered to the system board of the device. Adding memory would likely require excellent soldering skills and patience. Normally the thing that people upgrade on their devices is the removable memory/storage found on the SD/TF card inserted into their device.
