Sorry I haven't got back to you sooner. The best place to seek help with your phone would be the sub-forum dedicated to your particular phone. I know very little about Samsung devices but in my rooting experience (HTC) unwanted apps can be deleted from the ROM zip file before it is flashed. However I would ask your questions of someone who knows your device.
