I smoked a rack of chuck short ribs for dinner yesterday. The wife and I ate a rib each. Tonight I'm pulling the meat off of the other two ribs, slicing it thin, and warming it up with some bbq sauce for some sandwiches.

I took a pic of my ribs before wrapping. It's cooking faster than I anticipated. I lowered the temp and let it get into the low 180s before wrapping. I'd rather let it rest and even warm it back up vs taking it into the two hundreds and lose some of that juice that wrapping produces.
