When boot in recovery mod there is not option for toggle signature verification.
JUST FYI I have Android System Recovery <3e>. what should do.

Try flash_image binary from this zip package of mine 1st, if that don't work then try root again...n make sure 1st of all that u have installed busybox...

either u hv not got proper flash_image binary or u r not properly rooted.
U can also flash the recovery via SP FlashTools.
