You call somebody and it's what controls the phone's screen during a call.

incallui = in call UI (user interface).
 
You don't. It's part of the operating system. It's used when the phone is actively in a call and not very configurable. What are you trying to do?
 
Call somebody. You see that the screen displays who you're talking to? Gives you the options for speaker or mute? Access the keypad? You are using it. That's the way it works and what it's for. It's what you see while you have an active call.

Were you expecting an app that is listed in your apps?
 
I'm not sure what you think incallui is but it's not an app. It only is invoked while a call is active and has nothing to do with texting.

Let me guess ... you've seen a lot of instances of incallui in your (or your boyfriend's ) recent activity on the Google Account info page and yo think it's something to hide what you're doing? That's a myth. Fake News. It's only the part of the operating system that controls what's on the screen when you are making a call. Nothing more.

I called someone but I still don't know what to do when I call someone

You talk to them. If you do anything other than talk (like put them on speaker, mute the call or access the keypad) you are using incallui. Even by simply displaying the picture of the contact while the call is active, incallui is being used. ANY time you make a call, you will see incallui in your activity logs.
