Unless the phone is defective it will stop charging the battery once it reaches 100%. Many people charge it overnight like you are doing.

Correct, yes. You can go into the data settings for your phone and turn data on or off. When data is off you can still call and text.

I've never heard of that plan before, do you mean the $30/month 5GB plan with 100 minutes? As for using the VOIP option - yes many people use VOIP apps to reduce the amount of minutes they use to save money.

Since the phones are reporting more data, are you only looking at data amounts from the start of your current billing date, or is it also including data from the last billing cycle?

With the current Double Data offer each phone gets 1GB of 4G LTE before being throttled. I think they throttle to 2G speeds, if so the 3G phone would also get throttled.
