RCS on Android to Android is end to end encrypted. iMessage to iMessage is as well. Android to iPhone is not, regardless of RCS status/usage. If you want secure messaging you'll have to use something else like WhatsApp.
Verizon and Samsung are phasing their messaging services out and suggesting you use Google Messages, it's legit. I think Verizon's is already dead.
If you hate GM then Textra is great, albeit no RCS.

When you open whatever messaging app you're using you should see a list of all the messages. Select one and you'll see everything that was both sent and received with that person or group. I use Messages, Whatsapp, Google Voice and Textra, they all works the same way. What app are you using...
