A couple of problems.

I just got a new unlocked LG V20 AT&T H910 and have noticed a couple of problems.

1. Battery Overheating alerts where if the phone is on and the screen is on, regardless of whether it is plugged into the charger or not, it regularly alerts for overheating and the temperature will change up and down any where from 85° F to 130° F in a matter of seconds.

2. The Headphone jack is either too big or broken.
Because any 3.5mm plug I've tried is so loose that it will fall out at the slightest touch.

To use headphones I have to wedge something in with the plug to hold it in.

Any suggestions and help would be greatly appreciated.

If you just got this phone and are already seeing obvious problems like this I would suspect there's going to be more popping up soon. I'd return it for a replacement, it seems just marginally functional now and you could be fighting with it a lot more later.

For the headphone jack, either broken or badly worn-out by the sounds of it. Professional repair required. Are you certain it's actually a new device, and not a customer return, second-hand, ex-demo etc. If you only just bought it, definitely return it for replacement or refund.

For the "overheating", what's actually telling you that, is it stock system LG or some third-party user installed app? Is the phone becoming excessively hot to the touch?

sounds worn out. Are you sure it's new in the box or did they give you a refurb device.

I would take it back and get another one. new out of box - or even refurbed correctly - headphone jack is tight - and it won't overheat.

As for the over heating messages that is from both the stock system and GSam.
But the phone never feels excessively hot even when the temperature is shown as 135°.
And the phone I got on eBay as new unlocked.
It came in the original box with the original accessories and doesn't show any signs of being used.
I think the temperature sensor is wacky since I know that the temperature can't go from 85° to 135° in three or four seconds and then a few seconds later drop to 95° and then change again a few seconds later.

Other than that it is working fine.

It might have been a return specifically for the reasons you state. I really would try and return it or you're going to be fighting it until you decide to replace it (or throw it in the river).
