It's mostly regarding gmail...

• Using gmail on the phone, how do you create a new note?
• How do you assign a label to an email in my gmail account?

I don't know about the note thing.

But you can label an email selecting that email and bring up the menu (on my hero you hit the "menu" button) and then clicking "labels". If your reading the email instead of in your inbox select "change labels" instead.

For a new note, I'm assuming you mean compose a new email.
When in gmail, click on the menu button and select "compose", to create a new email.
Not sure about the labels, as I don't use them.
