Probably whoever you left your phone with, unattended. Meaning, no one can install anything on your device without them having possession of it.
Could you explain why it is that you think someone is hacking it?

Because when I'm on the phone I can hear people on the background an sometimes I can hear myself like if someone is recording my conversation

Copy your contacts and settings to PC. Reboot the phone with factory image and try again to call somewhere.
I think it's problem with your soft and may be hardware, but not with hacking.
You describe analog way of signal processing like echo, reverberation. Now phones are completely digital, including audio processing.
So if somebody is listening you, you should not hear something at all.
