Instant Messaging - Gtalk, for example. I wrote this as I know that some branded phones prevent you from using IMs. Not sure about this, but I think if you get your Desire from UK's Orange, Gtalk is locked out - you can't use it and if you install it manually, you're breaching the terms of your contract or something.
Also, I'm pretty sure some carriers have problems with you using WiFi tethering or Skype for calls, etc.
I find most - if not all - carriers to be leaning towards the dark side so I would prefer giving them as little control as possible over your device or your contract or anything else for that matter.
