I have a BLU Vivo 8 with Android version 7.0. I believe I should be able to connect it to Ethernet and have tried various cable connection, but reach a snafu with changing my usb connection from MTP to USB Internet in developer options. Has anyone accomplished this and can demonstrate step by step how they got their phone tethered directly to Ethernet?

Have you confirmed the OTG-to-Ethernet adapter you're using is compatible with your Vivo 8?
It's not a universal matter where all of them will actually work with Android or with every particular model. The manufacturers of those adapters use different internal components so some are and some aren't going to work with your phone -- the Ethernet driver support in your model won't work every adapter.
