Surely this leads to artificially inflated stats regarding iPhone use..

Relax. Metrics companies know how to tell browsers apart, or haven't you ever noticed how the user agent string for Internet Explorer starts with "Mozilla" which used to mean it was a Netscape browser before Microsoft started hijacking that way back when.
