Application cache, can be any data in the form of settings/preferences/images that get downloaded to your device to make things like page load times quicker. Because items are downloaded and saved, they don't have to be downloaded again, saving time, bandwidth etc.

Very simply, it is designed to increase performance by making sure that frequently used data is immediately to hand. This could mean that an app is very fast to work and provide you with what you want, rather than having to go searching through your phone for the info it needs.
