If a phone has a removable, and terrible, battery, would it be possible to upgrade it? For instance, if a battery is, say, 2000 mah, would it be all right to swap in a 3000 without destroying the phone?
Your limitation here is SPACE. A person cannot pour 10 gallons of water into a 5 gallon bucket... and if your phone has room for a 2000 mAh battery, chances are that you won't be able to force much more battery in there. Samsung learned that very painful lesson in 2016, when they tried to put too much battery into too small a space: and the Note 7 was recalled not once, but twice; and production was halted.
That said, you may be able to find a battery cover that replaces the original back. It will be bulkier, but you would have more power.
