Backing Up Samsung Notes & Calendar Data

What I'd like to do seems simple to me but I cannot figure it out. I do not want to use any cloud backup solution offered by Samsung or Google nor do I want to use Google as my default calendar. I want to backup these files, Samsung Notes and Calendar data to my local NAS.

I've turned off the Gmail Calendar and only have the phone calendar selected within 'Manage Calendar' settings.

I've successfully used FileSync, the pro version, to regularly backup specific folders to my NAS. I'd like to create additional jobs with FileSync to target the folders that Samsung Notes and Calendar data are saved in. For the life of me I cannot find them.

Ideally I'd like to heavily use the Note 8 to become more organized but I don't want to put the effort in to lose it all if something goes south.

You're using two proprietary apps that are installed as system apps so directly getting to the locally stored files you'll need root access.
Don't know of the Samsung Notes app has an export feature that allows you to migrate your data, and in file formats that allow you to migrate everything to a third-party equivalent app but as far as I know the Calendar app itself won't export your calendar(s), it needs to be done via your online Google account. But since that's what you don't want, you might want to try some kind of calendar export app like this one:
https://play.google.com/store/apps/details?id=tk.drlue.icalimportexport

But however you manage to export your data, all I can suggest is from this point onward use third-party, independent apps that will store things locally, and avoid proprietary services as much as possible.
