Best FOSS/paranoid replacement apps

Hello everyone!

Just updated my Samsung Galaxy S6 Edge to Android 6, and had to reroot it, so I figured I'd take this opportunity to get some help as to some good free FOSS apps (with no unnecessary permissions) as replacement for generic stuff on the S6 edge. Also, I haven't used, and would like not to use Google Play or some other store/inbetween installer app thing, so stuff I can download directly and load up.

Stuff I'm currently using that I've replaced already (tell me if I'm stupid or if there's something better, or whatever):
Home Screen- Catapult (if you've got a better suggestion than this, I'm up for it, Catapult seems to waste a lot of space with its alphabetically ordered app drawer list)
SMSes- QKSMS
Web Browser- Lightning Browser
File Explorer- Amaze (works nicely, but I'm not sure it has properly been set as the default file explorer app)
Gallery- Leafpic (seems a bit unstable currently, though, and again, not sure if it has been properly set as the proper gallery app)
Email Client- K-9 Mail (although being a bit paranoid, I was apprehensive to install an email program, never used one before)
Camera - Open Camera (has a lot more options than the default camera, but again, doesn't seem like I've been able to set it as default, and I get the feeling that the default camera does a lot of automatic stuff that makes image quality better)
Reminder/Task List app - Mirakel (would be nice to have something that has more finely adjustable scheduling. Someone suggesting OI Shopping List, but it seems more an explicit shopping app)
Maps - OsmAnd~ (seems nice, haven't had a chance to extensively test it yet)
Dictionary - QuickDic
Notes - Swiftnotes
Music - Vanilla Music

(Sorry for not providing links, there're just too many, I'm sure you can find them all easily by googling)

I also tried installing VLC for videos and mupdf for reading pdfs, but they don't seem to install for some reason. Also, people suggested face slim as a facebook replacement and Newpipe as a youtube replacement app, but I access both services simply through the browser. Is there any purpose in getting dedicated apps for them instead?

Stuff I'm still looking for:
Contacts/Phonebook
Dialer
Calendar
IRC Client
Audio/Voice recorder
Office Suite app
Sequencers (for music)
Drawing app
Guitar app (I have Practice Hub, but it seems a bit bleh- I'd like something well designed for tuning, recognising notes, training, chord lists, etc.)
Other fun funky things that make use of my wonderful machine
Nice games (why are so many FOSS games so bland and boringly designed?!)

And anything else I'm missing! I would definitely prefer if it was FOSS software, but if it has the minimal required (or zero) permissions, it might be okay too. Either way, something I can download the apks of directly, not needing Google Play or such.

Have a look at f-droid, that's basically the best of Android open source in one repo. They have their own app store to download from, free of course. :)

Open source games can seem rather basic compared to the multi-gigabyte, eye-candy filled, extravaganzas that Gameloft, EA, etc. are putting out. But then those top-tier commercial games, usually with in-app purchases can cost literally millions of $$$ to develop.

Quite a few of the apps I mentioned I actually got from f-droid. It really is quite nice, but even that has quite a large selection to choose from :D. Another great resource is AOpenSource.
