Email stuck on setup

I don't want to use the Outlook app for various reasons. I had no trouble with this on the s6, but now, when I try to sign in, it hangs with a message saying, "Checking incoming server settings".

I did try the Outlook app just to see if it worked. It did. So I uninstalled Outlook and am trying to get the default email app to work.

Any thoughts/suggestions are appreciated.

I suppose I am. I never had this issue on the s6. I don't know how to even begin to do manual setup. It doesn't offer a settings menu, and I can see anything under the main settings menu for it.

Is there a thread that shows how to do that?

So the auto-configure for your Outlook account should take care of your initial setup but obviously there's something that's hanging up the process.
This is just speculation but just for posterity, re-install the Outlook app. Don't start it up, just re-install it. Now go into your phone's Settings >> Application manager, find the Outlook app, and tap on the 'Clear data' button. Now tap on the 'Uninstall' button. (Just uninstalling the app doesn't necessarily clear all its configuration settings.) Restart your S6 so everything gets reset and then try going the same process you did before to set up your Outlook account into your phone. Hopefully you'll just need to enter your email address and then password with the auto-configuration doing the rest this time.

Regarding the default Android email app, all I can say about it is while it is good for the most basic email needs, it's lacking for anything more than that. Third-party email apps generally provide a lot more functionality and often stability. As you didn't find the MS Outlook app to be your preference I'm going to tentatively suggest you give the Blue Mail app a try, if only because it has good Outlook interaction built into it:

Pair up your S6 with your Outlook account, skip trying to set up the default email app, and use the Blue Mail app. If you don't like it either, go through the 'Force stop', 'Clear data', 'Uninstall' process to remove it, and use the default Android email app.
 
You could try adding your Outlook account to the Gmail app. I have a number of 'other' accounts added to the Gmail app including Hotmail.co.uk and Hotmail.com, and they all work well. It is straightforward to add accounts and the auto setup works well, as does the Gmail app as a whole.

I'm not necessarily suggesting you stay with Gmail, a lot of people try to use Google products as little as possible, I'm not one of those ;), but you may find it works well for you too.

Thanks for all the suggestions. Here is how I resolved it. When the list of providers came up, instead of choosing Outlook, I chose Other Account. POP3 didn't work, but I tried iMAP, and it's good to go. I really am good with the default app. I'm a theme junkie, so I try to use apps that will change with the theme of the day.
