Buttons wont allow..

I have a car head unit that runs Android 8.0
Its actually a Seicane
It recently crashed and is now booting to a screen stating my tablet is corrupt and I can either "try again" or "restore to factory settings". My problem is that the buttons to choose my options will not respond and I cannot choose to restore it, its stuck on "try restarting again".

What do I need to do?

Well you need to send it to service, there is nothing you can do beyond that point if your power and volume buttons will not work..

Does sounds like the firmware is corrupted and needs to be re-flashed.

Isnt there a way to reboot from an SD card?

Quite possibly that's how it's done, especially as it's a car unit. But you'll definitely need the original Seicane firmware file to put on the SD, and specific instructions on how to do it, like you got to hold down certain buttons or something. Suggest you contact Seicane support about this. https://www.seicane.com/contacts

This looks like the recovery is trying to find a firmware image file from the SD, because it can't boot normally. But you'll definitely need to obtain that file from Seicane, as it's specific to this unit. "Factory data reset" won't fix corrupted firmware anyway.

I see the knob says "Jeep", I assume this Android is an after-market and wasn't factory fitted by Jeep.
