Can I download an update for this thing?

Forgive a noob in advance. I'm not an experienced Android user, but I impulse bought a refurb tablet for $35. It's an iView i700Q, a little Intel Atom 7" job. I've been having some fun setting it up and downloading some apps, but I'm horrified to find that it is running Android 5.1.1 Lollipop from way back in 2015.

When I go to the update section of the Settings, it offers me two options: update from an SD card or update from internal storage. This seems to imply that I could just download an update and go for it.

Where do I download such a thing?

And how far should I update this thing? Can I go all the way to the newest version? I think this thing has 1 gig of RAM and 16 gigs of storage.
