I've had apps I've used before that made themselves invisible unless a chosen or preset dialcode was typed into the phone app. Can you do that with any app, and if so, how?

I'm thinking something more sophisticated than that, I think. Basically, if I wanted to put an app that notifies me if any of my files are deleted but I don't want anyone who uses my phone to be able to delete it or see it, how to hide it from even system files. I'm not sure it's possible.

Android includes a couple of features that might be viable workarounds for what you're asking.
One is Pinning, where you lock the screen to only show a chosen app:

The other is Guest Mode, where you enable it so there's a secondary, isolated user account that's separate from your user account:
