I blocked this person, deleted all the messages, and later changed my mind. I went to unblock them and the phone just keeps saying "unblock" over and over, not changing
Have you cleared the cache in the contact app? Might help. Are your contacts backed up somewhere? If they are you can clear the data and reload your contacts from the backup. That should clear the block.
