Change text color bubble

That's going to depend on which messaging app you are using. Some can't be changed.

BTW, the G6 is from LG, Galaxy phones are Samsung and that would be the S6. Which one do you have?
 
?? There is no "Galaxy G6". "Galaxy" is the brand designation from Samsung and "G6" is a model from LG.

Do you have a specific model number? You can find that under settings>about phone
