Changing default apps (and some other stuff)

Hey all, first post here, hope I don't make any mistakes!

I've rooted my phone, and I'd like to know how to change the default apps for specific things- Camera, Gallery, and so on.
The usual way to do it seems to be to be to open whatever you want that uses the new app, and select the new app and choose "Always".
Failing that, I'm supposed to go to my Settings->Applications->Default Applications and change it if it is set.
Failing THAT, I'm supposed to go to Settings->Applications->Application Manager->All, select the app that has been set to default, and click "Clear Defaults".

Thing is, this doesn't work for everything. For example, I downloaded OpenCamera, and would like to set it as my default camera app, but when I go to Settings->Applications->Application Manager->All->Camera, the "Clear Defaults" button is already greyed out. Similar with the File Manager app where I want to replace it with Amaze.

Also, as a secondary issue, I downloaded VLC and mupdf and loaded them into my phone's folder with the intention to replace my default video player and pdf reader, but when I click either of them to install them, I get the permissions screen, and when I click INSTALL, I simply get a "x App not installed" message. I had enabled installing apps from other sources (in fact, haven't yet and don't wish to use Google Play), and disabled the message that constantly popped up when installing something asking if I wanted to check with google or whatever (I don't remember exactly what, and I can't find the setting again to explain, but I'm hoping you understand). Reenabling that doesn't help install these two apps, and it is so far only these two apps that have been causing this problem.
