Changing Default on viewing spreadsheet attachments to incoming e-mail

On Nexus 7, I inadvertentlyselected to view spreadsheet in Documenet Viewer always. BIG mistake! How do I change that default selection to one time only.
 
System Settings/Applications/All, select the Document Viewer here, scroll down to Default and tap on Clear defaults. Next time when opening some spreadsheet, Android will ask for program to open with.
