where are my photos stored once deleted? i want to make sure they are un-retrievable from my phone.

The best way to ensure that the files aren't available is to format your SD card (assuming you no longer want to use the card, or you are content with losing all of the data on the card).
If you need to do that for any data stored on the phone, a factory data reset is advised, especially if you are selling/trading in the phone.
