Controlling Google Play Music through a Car Stereo

Are there any options for controlling, or at least having the option to press next from the Car stereo for Google Play Music as opposed to having to press next on my phone?

It depends on the head unit in your car. Some (JVC, Kenwood) have Android apps that should allow what you want. Some others may be able to support basic control via AVRCP.

Is it via stereo-in jack? Bluetooth? Etc? If via USB, Bluetooth, and a few others, you should have control over skipping, pausing, and sometimes even file browsing.

I'm currently looking into replacing my car stereo and I just want to ensure I got one that did what I wanted it to.
