I have been enjoying [ROM]T.E.A.M | Transparent | 2.3.3 | ThKernel | v4.0 | 17/12/2011 - xda-developers for a while.
Most stable all depends on what you do on the phone and basically, trial and error.
My phone has froze up on me about twice in the past 4 months or so. And both times were most likely related to a poorly written app I was running on the phone and not to do with the ROM itself.
