Customize the app menu?

The only thing i found about customizing was about the Homescreen.
But i want to edit my app screen

is there any way or program that can edit the app menu?
Like change the structure of it, icons, text, background, folders,...

i have a lot of apps on my phone, and i would like to edit the structure, add some folders, remove the text, other system of displaying the apps etc.

I've rooted my phone, but i have no idea how to edit that
I can change the icons in the .apk, but the background and stuff

Some alternate launchers such as ADW give you the ability to divide the app screen into categories, but that's about all I've seen. To do anything major you'll have to write your own launcher app.
