On a Pixel device I assume the stock email app is Gmail. The Gmail app doesn't insert a default signature in emails, i.e. there is no "send by" or "sent from".
The screenshots I posted were from Gmail and I have the Pixel 6 Pro.
I have Gmail on a Samsung, but it looks the same as your screen-shots, there is no default signature in Gmail.
I don't really understand why anyone would want one of those default signature that advertises which app sent it. I can see why the app developer might, but not the actual user.
I do set a default signature on some of my mobile clients, but it's along the lines of "Sorry if this is a bit terse, I'm sending from my phone".
I agree with you. As for me, it's like you don’t care what you're sending to your addressee if you just leave the default "sent from" signature. It doesn’t add anything useful and looks a bit lazy. I prefer to customize mine to look more professional and polished, especially with tools like Exclaimer that make it easy to create something personalized.I don't really understand why anyone would want one of those default signature that advertises which app sent it.
