First off, what brand of phone are you using, and are you rooted?
Most devices store your messages in a folder located somewhere in your data partition, which can be retrieved by using a root browser.
Also, you can contact your provider and usually they can give you a list of your messages.
But, also note that sending and recieving messages after youve deleted some will potentially make it more difficult to find lost or deleted messages.
