I figured it out for me.

First I tried downloading the latest Google Play version as I read it was being updated. I downloaded from here: http://www.apkmirror.com/apk/google...google-play-store-5-3-5-android-apk-download/

After download was still getting "server error" when I opened Google Play store.

I went to Settings>Accounts>Google>
Under accounts, it said "sync error" or something similar - go into the account and uncheck those items with the error (including Google Play items) and then recheck them - sync should complete and not have any errors now.
Then go back into Google Play store - it may pause for a few minutes but then it opens as usual.
 
This problem frustrates me a lot. So after a long re search i was able to find solution. Try these fixes:
  1. Clear cache & data and restart play store.
  2. Check if your firewall is blocking connection. (Disable firewall for a moment and open the play store)
  3. Check problems with proxy, if you are using one.
