Unless I'm misunderstanding the question, yes it will reduce data usage as by default airplane mode shuts off cell/data/wifi radios.

I am on a Verizon unlimited plan which supplies up to 20 gbs of data use per month before charging for data over that. Last month I used 28 gbs (!!!!) and that was,using airplane mode frequently. I have disabled every app VW lets, but I know many run in the background even when,not bring used. Besides putting it in airplane mode and not getting calls as they come, any suggestions for cutting data usage?

Chrome browsing the net, Overdrive to download audio books and Google Earth, infrequently.. Of course the audiobooks are returned so they go away, but while I have them they consume data.
