Downgrade S8?

I know there are probably many places I could find this, but I would much rather come to a reliable source and ask instead.

So, my phone wanted to do an update. I despise it. The emojis look wack, the keyboard is uncomfortable, and just the general interface doesn't look right. How do I roll it back to the previous version that I had? The latest update updated my phone to Android 8.0, whatever that is. Pretty sure the last version I have was like 7.x.x. I really hate this update. Can someone tell me where/how I can downgrade it? Thanks.
 
@pickstarr if anyone can explain how to go from one version of Android back to a previous version its the fine men and women of this site and of the xda forums
 
Dannydet tells it right.

For the mere mortal, that process is pretty tough, and commits you to tweak and tinker for the rest of your phone's life whenever there's another update. I rooted an earlier Android phone to obtain a few features I thought I couldn't live without. After seeing how laborious, risky, poorly documented, and often flakey the results were, I decided I'd live with the stock OS from then on.

My phone is essential to my daily life. I'd rather let Android handle making a stable system, and live with the features I'm not wild about.

But you may have a different feeling about that, which is cool. As Joe71 says, this community can get you started on rooting.
 
If you have a US, Snapdragon variant, I think you're pretty much stuck with what you've got.

You can't downgrade and your bootloader is locked, meaning ROMs are out of the question too.
