E-mail Configuration Profile OR Remote Control Phone

I am an IT consultant and have clients that need help setting up their e-mail on their mobile device. On the iPhone, I can create a configuration profile from my computer with the iPhone Configuration Utility that contains all of the POP and SMTP settings, then send that profile to the iPhone over USB cable (usually I just remote desktop into their computer to do this). How can I do something similar with the Android? Is there a file I can create, even in plain text, that the Android will automatically install to the e-mail settings? If not, is there a program I can have the customer download to achieve this? I thought about using the phone's synchronization software, but sometimes the software isn't always reliable. I'm looking for something that's considered a standard configuration method.

If not possible, what's the best way to remote control an Android device without rooting the phone for this type of situation?

LogMeIn Rescue seems good, but right now it doesn't support what I need it to.
 
From what I'm aware of iOS and Android both limit the ability for any tool to connect and show the screen (unless the phone is rooted/jailbroken). Some remote apps provide limited connectivity to the file system and various other diagnostics, but it is not very useful at this point.
