Eink displays

Are there such devices that can run and edit spreadsheets on any eink tablets on the market?

I'm looking to develop a run sheet for work that can display a spreadsheet with an always on display, such as an eink tablet that can be edited on the fly. Is this possible? Also, can eink displays deveolp screen burn?

AFAIK E-ink screens cannot develop screen-burn. I believe most E-readers run a limited version of Linux on low powered hardware that my struggle to run even a lightweight spreadsheet like Gnumeric.
Also, screen refresh is VERY slow.
Sony make an E-ink tablet with a 13" screen https://www.sony.com/electronics/digital-paper-notepad#overview but it's not cheap ($799 on the Sony site).
