How can you be sure you have eliminated all evidence of unwanted images, videos, documents and websites from the Galaxy Note 2?

There are apps, many of them, for that purpose, available at Google Play Store. Here's just one:

Also, a factory data reset will certainly take care of that. ;) If you chose to do the reset, be sure to allow for the backup of needed items and data prior to doing the reset. ;)
 
There is no "trash can" or "recycle bin" in Android and the Galaxy Note 2 uses flash memory so once deleted these files would be very difficult to recover. To be certain, especially if you are returning or selling your phone, you should re-format the internal storage and perform a factory rest. Here's a link to help you with that.
