In no particular order:

K-9 Mail (good replacement email app - will handle your Gmail via IMAP as well as other IMAP and POP3 accounts)

BeebPlayer (watch BBC iPlayer TV)
Record It (if you're in the UK and a Sky+ customer)
eBuddy (does all sorts of Instant Messaging - I only use it for MSN)
Shazam (for those times when you hear a song and want to know what it is)
Twidroid (if you use Twitter)
Aldiko (for eBooks)
Astro (useful file manager)
B-Folders (secure storage of information)
Barcode Scanner (to scan barcodes from web sites and install search for software)

Metal Detector - just cos it's a cool little show-off

Games:
Robo Defence, Project INF, PapaStacker, Flight Director

Just my thoughts.

IMusic(download full mp3s straight from your phone)
