How do I get Facebook phone numbers off my phone??

By getting them off of your phone, do you mean remove them?

If so, the options are uninstalling the app or unchecking the contacts option in the app.

I think you are asking about removing Facebook entries from your address book? If so, try this:
Settings > Accounts and sync
(tap on your Facebook account and uncheck "Sync Contacts")
