on fb and instagram is it possible to find out EXACTLY the real identity of a fake profile, or can I only suppose it ?

I'd say it's impossible. Because anyone can make a FB profile and put whatever they like on it, and there's no verification.

It might be possible using OSINT (Open Source Intelligence - using publicly available data) tools like Maltego with the FB profile as input, depending on how careful the FB account creator was to keep contacts separate from their real identity. There are lots of YT videos on using Maltego and other OSINT tools for various purposes.
