how do I put screen lock back on my galaxy s from button on side as it just comes up phone switch off

Settings -> Location & security -> Set up screen lock
Also check Settings -> Accessibility to see if there is an option enabled that makes the power switch behave like that.
You might also find an app in Google Play that will do the job. Perhaps one the lockscreen replacements will help.
