can I customize a notification for a certain contact when the send me an email?

Have you tried editing the individual contact's notification ringtone. If that doesn't work, I'm not sure what to do from there, I wish I could provide further assistance.

Welcome. I'm sorry nobody has posted a response yet. Edit: Hah, rabidhunter posted while I was writing up my post! 
The stock email app won't do it.
If you're using the gmail app, it can give you different notifications based on labels; you can then add filters to gmail (probably only from the web interface) to automatically apply labels by sender.
You might also look at some alternative email apps. It sounds like a feature that might exist in something like K-9 Mail.
