My s3 syncs via Bluetooth very nicely.

The problem is when we get into the car the phone gives a notification that it Needs the okay to sync with contacts. This means you have to take the phone out and click okay.

After that you get another notification asking to sync with maps.

The notification sound does not go away until you take the photo Out and click okay to sync.

This happens every time you get into the car and is very aggravating.

Any ideas?

I'm not sure about the maps thing, but on my Ford bluetooth it asks to sync the contacts, and I had to click okay like you said, but there was also a little tick box at the bottom of the notification saying remember this setting or something similar. I ticked that then pressed ok and it hasn't asked again it just syncs automatically.
Next time you connect have a look to see if it has the little tick box thingy

I am embarrassed to say that was the solution.

It was happening on my wife's phone and she never showed it to me.
