Gallery Categories

How do I add/edit photos into categories in the gallery? I can delete them by pressing "more" but the automatic sorting doesn't get everything

Select album or picture and choose more in the upper right corner.

It seems that the category function uses some type of algorithm to sort pictures and is very generic. An approach that I've used for years is to create a folder called My Pictures using a file manager and then create differently named subfolders inside of it for how I like to sort photos. "Family" "Vacations" "Concerts" etc. Once a picture is placed into any of these folders the OS will see it as a photo album in the gallery. You can then sort pics into any of the folders that you want to.

First tap left upper and select albums then more and you can add albums and by selecting a photo you can move it to another album.

I don't want to have to move all my photos into albums. I just want to be able to add them to categories like 'work' and 'important', but the only category on my s8 is documents.
How do I add more?
